Sambar is the famous south Indian vegetable lentil dish simmered with tamarind water and a ballard of spices. Sambars contain a variety of vegetables like drumstick, yam, carrot, okra, white pumpkin, brinjal, tomato and the list goes on...
Ingredients : 
1 cup dhal
1/2 tsp. tumeric powder 
1 dsp. oil
4 dry chillies
1 1/2 dsp. coriander
1 dsp. bengal gram dhal
1 tsp. fenugreek
1 small piece, asafoetida
1/2 cup grated coconut
1 knob of gooseberry size tamarind 
18 pieces of brinjal sliced
4 green chillies slit at one end
A few curry leaves
Salt to Taste
1 dsp. oil
1 dsp. ghee
1 tsp. mustard
1 tsp. fenugreek
2 dry red chillies cut into 4
Method :
1. Wash the dhal and cook in boiling water adding turmeric powder. crush the cooked dhal to break it coarsely
2. Heat one dsp. oil and fry chilli, coriander, bengal gram dhal , fenugreek and asafotida one by one and powder these together
3. Broil the grated coconuts in the remaining oil and grind it seperate.
4. Mix the masala paste in two cups of tamarind water and add the brinjal, green chillies and curry leaves. Mix the coarsely mashed dhal in 1 cup of water and add to the vegetable .Add salt to taste.
5. Cook the mixture. when it boils vigorously add the coconut paste diluted in a little water. Continue cooking till it is medium thick .6. Fry the seasoning in mixture of oil and ghee .pour the seasoning to the sambar
