Avial (aviyal) is a delicious preparation made with mixed vegetables, curd, coconut and seasoned with coconut oil and curry leaves. It occupies an important place in Kerala cuisine and is a must for Onam Sadya.
Ingredients :
1/2 kilo (drumstick, cucumber, string beans. brinjal, yam, raw banana and snake gourd) seeds all diced.
1/2 tsp. chilli powder
1/2 tsp. tumeric powder
8 green chillies half slit
2 cups grated coconut
1/4 cups raw mango diced or tamarind pulp to taste
To taste - salt
A few curry leaves
2 dsp. coconut oil
Method :
1. Grind grated coconut coarsely
2. Boil 1 cup of water adding chilli powder and turmeric powder. As it boils put the vegetables. vegetables that need longer time to cook should be added first.
3. Add green chilli when the vagetables are nearly done. Add salt and tamarind to taste.
4. Lastly add the ground coconut paste and allow to simmer till everything is well mixed.
5. Remove stir in curry leaves and oil.
